African Recipes.

Yeah, Yeah.. Ok, I know this is a Jamaicanfood forum but good food, like good sex, is good no matter where it comes from...I was just wondering if anybody (like Afri-gal and any of the 9JA crew) had some good recipes from Mama Africa that they could share with the rest of us food ho's. (p.s, we need a food related smiley.)

I can't agree with you totally... anyone can cook for me, but I'd prefer the sex come from a woman.

Do you have the recipe for "fu-fu" (Nigeria)? The name varies with country. It's basically dumpling done like mashed potatoes. Eaten with meat & gravey/stew (using your fingers or course).

there's different things u can eat as "fufu", there's a lot of substitutes iv seen ppl use, lyke jiffy's mix and all dat. which part of da "fufu" r u asking for, da soup or...?

That sounds like pounded yam to me.....it starts as a powder and gets cooked up with water til its almost like paste, but looks like mashed potato. They use it to scoop up the other food. If we're talking about the same thing.

DOH!! Walked into dat one str8!! Thats why it takes me so long to post.... yeah, ur right, but dats di kind dey av hya. di fresh one is from real yams, not di powdered one. i'll try to help wid dis topic, but i wudn't noh much

Okra Soup:

I am not sure how to interpret the measurement of the compoinents to u fellas but but I'll give it my best shot.


1. Palm/olive/corn/vegetable oil
2. Smoked fish/ roast turkey/beef/ whatever u prefer...chicken is a hell no unless it is smoked/roasted.
3. A bowl of cut okra (okwuru)
4. pepper (optional 'cause that *** gives me ulcer)
5. onions
6. salt
7. pumpkin leaves (U can use whatever vegetable but pumkin leaves rock!)
8. Stockfish (that is if you have access to it)

well, maggi or knoor or whateva is optional, you can still cook a mean Okra soup without em.

The okra soup is served with either amala, akpu, eba or alibo...okay these are stuff you know as 'foofoo' and they are basically yam pulps prepared in a variety of ways or cassava flour pulp (Alibo).

grab a lump of foofoo, scoop the soup and send 'em down ya good ol belly...you don't wanna eat that with cutleries...pure abomination...wash ya hands and enjoy...

I also found a cooking show on youtube.com where a woman from Nigeria named Ngozika does a little cooking show check it out...I've made most of the things she did and they came out wonderful!

Hey Afri-gyal...quick question what is the quickest way to get the skin off the peas? This is what I've been doing, I soak the peas and remove the skin a few peas at a time because when I put them in the palm of my hands and rub them together they don't come off, so I remove the skin one by one which is very time consuming. My friend Ugochi told me to put the dried peas in the blender without water and grind them until they are in little fragments then add water to it and the skins will float to the top. I haven't tried it yet but I will, what do you do when you are making akara?
