Hmmm... when i had it, i dont remember there being loads of veggies in it..
like mi seh..mi only really remember da beef an tomato...
..but i have been told dat dere are loads of diffrent recipes.

yes, when ur comfortable with making it or get real good at it, then u can costomize it. there's many different ways to make jollof rice. u can make it with/out vegetable. sum basic ways u can also make with pea/corn mix, but not no cabbage. lol.

thanks fi de tips Afri-gyal..I spose is a bit like a lot of phillipino or chinese food where every chef or family have dere own recipe an everyone do it diffrent, but da end result is basically de same, right?

exactly. but you can't put vanilla inside a lasagna dish, u know wat i mean...it's jus one'a dem things are done a certain way, even if it's customized.

if ur looking for NIGERIAN jollof rice, i suggest not using:
ginger
cinnamon

which is still sorta dutch
and the dutch at one time controlled lots of east India and Malaysia and SE asia and SE africa so their versions of formerly East African dishes have influences from many parts of the world
the eggs, green beans and cabbage i would say is from the Malaysian influence dem use those things in every freaking thing
**** you should see the spread dem make for a curry dish
i hated cleaning up after mi dutch gf when she made curry

My wife is Liberian so I both cook and collect a whole bunch of African and West African recipes. These are all freely available at:

Celtnet West African Recipes
And, yes, I do cook these myself. In fact, if you look at the Liberian recipes (and you really like very hot peppers) then many are my wife's authentic recipes from that country.
