PYE is right. The powder, is CRITICAL lol... coming from a family of Indian's I HAVE to know how to mek curry tuh blouse an' skirt! The brand of powder you use is important and also the AMOUNT of powder you use...

Also a couple other tips:

1. Watch how much CUMIN you use... too much, too little, or none at all will make it taste JACKED UP!

2. GARLIC... hi be careful, thanks! lol.... not to much, not too little, and for the love of GOD don't forget to put it in!

3. You can change the flavour of the curry by the veggies you use! If you want to sweeten it add a little carrot juice when you cook down your veggies and add more tomato! This takes some of that Harshness out for those who can't handle TOO mcuh curry! I say this cuz my Canadian friends all hated curry till they tried mine. I can make it many different ways. There's the West Indian way, the East Indian way, then there's the way we mek it fi North Americans.

4. I recommend NOT putting hot peppers in the pot. Keep hot sauce on the side for people to flavour to their own taste. Only home made guyanese Pepper sauce for me LoL

5. Please pre-season the meat (whether chicken, beef, goat whatever) what you should do is , after you CLEAN the meat (let's not forget) rub it down with garlic powder, a SMALL amount of curry powder.. SMALL amount! Salt, pepper, parsley, and some basil. This is so flavour is all the way through the meat not just on the outside... make sure you stab holes in the meat with a fork or something so the seasoning falls through... leave that to sit for a couple hours BEFORE you start your pot!

6. OPEN all windows, doors, and put on the fan over the stove lol! Close all bedroom doors, and wash up right after cooking... this keeps the CURRY smell in the pot and not on your wardrobe, and all over yuh YAAD!
