Jamaican Curry Chicken
Ingredients:
- 3-4 lbs of chicken
- 2 limes
- 3 cloves garlic
- 2 stalks escallion
- 3 tbsp curry
- Thyme
- Scotch bonnet pepper
- A pinch of pimiento
- 2 tsp salt
- 2 tbsp oil
- medium irish potatoes
- 2 cups water
Preparation:
- Cut chicken in small pieces.
- Juice limes in water.
- Wash chicken in the limed water.
- Season chicken with Garlic, Escallion and Thyme.
- Pour oil in frying pan and add curry to pan with oil and allow to brown.
- To the curry, add 1/2 cup water and mix.
- Add chicken to pot and stir.
Turn down flame and add the remaining water gradually.
Add scotch bonnet pepper to your liking.
